If the mushrooms are large, cut them into bite-sized pieces. For smaller mushrooms, leave them whole.
Heat a pan over high heat and add a little oil. Once the oil starts to smoke, add the mushrooms and cook on high heat, stirring occasionally, until both sides are light brown.
Sprinkle salt and add thyme, then cover the pan with a lid. Let the mushrooms cook until they release their natural juices.
Remove the lid and continue cooking until the liquid evaporates completely.
Add the minced garlic and butter to the pan. Stir well and cook until the garlic becomes aromatic and lightly golden.
Sprinkle black pepper over the mushrooms, taste for seasoning, and add more salt or spices if needed. Cook for another minute for all the flavors to blend.
Garnish with extra thyme or herbs of your choice. Serve hot as a side dish or enjoy on its own!
