  • 1 whole pumpkin butternut, or any type, peeled, seeds removed, and cut into 2 cm (¾-inch) cubes
  • 3 tablespoons olive oil
  • 2 teaspoons cinnamon powder
  • Salt and pepper to taste

  • Preheat the oven to 350°F (180°C).
  • In a large bowl, toss the pumpkin cubes with olive oil, cinnamon powder, salt, and pepper until evenly coated.
  • Transfer the seasoned pumpkin to a roasting dish, spreading it out in a single layer.
  • Roast for approximately 30 minutes or until the pumpkin is tender and slightly crispy on the edges.
