 Beetroot Thoran (Beetroot Stir fry)

In this post, I like to share a simple beetroot thoran/poriyal which is mixed with grated coconut and other spices.  Beetroot thoran is a common side dish recipe that tastes delicious with rice and some curry.

Beetroot is also a nutrient-packed root vegetable that is good to include in your regular diet.

Once you have all the ingredients ready, then it takes no time to prepare this easy delicious dish.

Beetroot Thoran Recipe – Ingredients

You can either use beets with the greens or just the beetroot itself for this recipe. Beetroot greens are also very healthy and tasty too.

Wash the beets to remove any dust and trim off both sides. Peel the skin and chopped it into small pieces. You can either shred, grate, or chopped based on your choice and set it aside.

Prepare Coconut Mixture

Coarsely crush together the grated coconut, green chilies, cumin seeds, turmeric powder, chili powder, garlic and shallots

Today we are making a Kerala style Beet Root Thoran, grated beets with leaves are stir-fried with coconut and other seasonings. In south India, Kerala when you stir fry a vegetable with coconut it is known as "Thoran". Thoran is often served with steamed rice and curry.
You can use this recipe to prepare thoran with any other vegetables as well.

Ingredients
  

  • 3 cloves garlic sliced
  • 2 green chili cut into small pieces
  • 1/2 tsp cumin seeds
  • 2 small onions sliced
  • 1/2 tsp chili powder
  • 1/2 cup grated coconut
  • 1/2 tsp turmeric
  • 2 tbsp vegetable oil
  • 1/2 tsp mustard seeds
  • 2 dried red chill
  • 2 Cup Beet Root
  • 1 tsp salt to taste

Instructions
 

  • Heat oil in a pan and add mustard seeds.
  • Once the mustard seed begins popping add halved dried red chili and curry leaves, stir for few seconds.
  • Add chopped beetroot, sprinkle 1 tbsp water and mix it very well. Cook for 5-7 minutes at medium-low heat, stirring occasionally until the beetroots are cooked well.
  • crush coconut, small onion, cumin seeds, green chili, garlic, turmeric, and chili powder. Note: decrease or increase chili based on the desired spiciness. Fresh coconut has a better taste but frozen or dry shredded coconut will work just fine.
  • Once the beetroot is cooked add crushed coconut mixture. Stir for another 2-3 minutes.
  • Once the water is gone give the veggies a quick stir before removing them from the stove.
  • Yummy beetroot thoran is ready! Serve with steamed rice and other curries.
  • Store in a glass or ceramic container as the spices will not stain them. Do not cover until completely cooled. Can keep in the fridge for up to 1 week. This can also be stored in the freezer quite well, we do it often.

Notes

You can get unsweetened coconut in most of the grocery stores these days. Desiccated coconut is basically the shredded coconut that is dried. You can also get frozen coconut in Indian grocery stores.

 What is Thoran?

Thoran means chopped vegetables cooked with grated coconut mixture and other spices such as cumin, green chilies. It is a common dish served for Sadya meals.

There is another type of Kerala stir fry called ‘Mezhukaperuti’ in that Vegetables are cooked in spices with a lot more oil than for thorans, and also usually without coconut mixture.

Mustard seeds, dried red chilies, curry leaves are the other key ingredients in the tempering of vegetable thoran. We only use little oil for tempering.

This tempering gives the dish a wonderful aroma and fresh spicy taste. Although “Thoran” can be made with all types of vegetables the spice used for different vegetables may vary. For some you could use mustard seeds and garlic and others may require split lentils and other spices.
