Zucchini Carrot Thoran is a quick and easy stir fry made in South Indian Style. This base recipe can be used for a variety of other vegetables bringing different flavors of each.
This recipe is inspired by the flavours of south Indian cooking. If you like more or less spicy you can always adjust the quantity and still tastes wonderful.
What Is Zucchini?
Zucchini is a summer squash that looks like a cucumber. Zucchini is a very common vegetable that is available in most supermarkets. Zucchini does not have much flavor on its own but when you add spices it is very delicious.
The skin is very tender and you don’t need to peel the skin before cooking. When you buy zucchini look for fresh, firm and tender ones.
How to Cut Carrot and Zucchini for this Thoran?
I grated the carrot and Zucchini using a mandoline slicer but you can also cut them into small pieces using any method.

Ingredients
- 2 Zucchini
- 2 Carrot
- 1/2 tsp Mustard Seed
- 1 Onion
- 3 Garlic Cloves
- 2 Green Chili
- 2 Dried Red Chile Pepper
- 1/2 tsp Chili Powder kashmiri
- 1/2 tsp Turmeric Powder
- 1 tsp Salt
- 2 tbsp Oil
- Curry leaves few
Instructions
- heat oil in a medium saucepan on med-high heat.
- add mustard seeds and whole dried chili
- When the mustard seeds pop, add onion, garlic, green chili, and curry leaves
- Stir the onion till light golden brown and add Turmeric powder and chili powder. Reduce heat and stir until the onion is golden brown.
- Now add the carrot and salt, stir to mix, and coat the vegetable with the spices.
- Cook for 3 minutes and then add zucchini.
- After adding zucchini increase the temperature (high) and stir frequently until all excess water is evaporated. Make sure to stir often so that it doesn't get burned at the bottom. You do not need to cover the vegetables because it cooks very fast.
- It requires very little cooking time, make sure not to overcook the veggies.
- It goes very well with steamed rice, Sambar, Moru Curry etc.
