Vegetable Thoran is an Easy South Indian curry! Basically a vegetable stir-fry you eat with rice or even chapati. It’s quick, simple and super flexible to use any of your favorite veggies. Here we used swiss chard from our own garden and beans.
Recipe: 1/2 cup onion thinly chopped 3-4 cloves garlic thinly sliced 2-3 green chilli split and roughly chopped (more/less to taste) 1/2 cup grated coconut 1/2 tsp turmeric 2 tblsp vegetable oil 1/2 tsp mustard seeds 1-2 dried red chill 3-4 cups choice vegetable 1 tsp salt (to taste) 1. Add oil and mustard seeds to a medium pan on high heat. 2. Once the mustard seed begin popping the oil has reached the correct temperature. Add halved dried red chili 3. Add onion, garlic and green chili. Stir often on med-high heat until light brown. Note: decrease or increase chili based on desired spiciness 4. Once lightly brown, stir in turmeric and salt. Allow the spice to fry for 1 minute. 5. Add grated coconut. Stir until well mixed. Note: Fresh coconut has a better taste but frozen will work just fine. 6. Finally stir in vegetables in 2 parts. This is to ensure the spices properly coat your veggies. Once well mixed create a well in the center of the pan for water to steam off. 7. Once the water is gone give the veggies a quick stir before removing from the stove. 8. Store in a glass or ceramic container as the spices will not stain them. Do not cover until completely cooled. Can keep in the fridge for up to 1 week. This can also be stored in the freezer quite well, we do it often.
