For the no-bake graham cracker crust
- 1 1/2 cup graham crackers
- 2 tablespoons dark brown sugar
- 1 stick unsalted butter melted
For the cheesecake Filling
- 1 packet gelatin
- 5/8 cup heavy cream
- 12 oz rich cream cheese real cream cheese, not cream cheese spread
- Juice of 2 Lemons
- 1/2 cup granulated sugar
- 1/2 tsp vanilla optional
Instructions
- Prepare cheesecake base:
- If the graham crackers are not fine crumbs you can process it in a food processor.
- Add dark brown sugar and butter. The moisture in brown sugar helps to solidify the crust. Process until the mixture clumps together like wet sand.
- Press mixture evenly into the bottom of a 9-inch baking pan and refrigerate/freeze while you preparing the filling.
- Prepare no-bake cheesecake filling
- Dissolve gelatin in 150 ml boiling water. Make this up to 1 1/4 cup by adding cold water and leave this to become cold, thick, and nearly set.
- Whisk heavy cream into stiff peaks. This is an important step to get a thick fluffy no-bake cheesecake filling. The heavy cream must be cold in order to whip into stiff peaks.
- Make sure the cream cheese is at room temperature before mixing. If you beat cold cream cheese with other ingredients it will result in a chunky cheesecake filling.
- You can adjust the granulated sugar amount but I like less sugar because you get that tangy cream cheese, lemon, and vanilla flavors stand out with less sugar.
- Mash cream cheese, thickened gelatin, lemon juice, and sugar
- Fold the whipped cream into the cheesecake filling gently so you don’t deflate the air. The air creates a delicious mousse-like consistency and solidifies the filling in the refrigerator.
- Refrigerate the cheesecake for a minimum of 6-8 hours, but overnight is better. To get a sturdy no-bake cheesecake with beautiful clean slices, refrigerate for a minimum of 12 hours.
- After refrigerating, decorate with jello, fresh berries, salted caramel, whipped cream, etc.
