Scrambled Eggs
In a pan, heat 1 tbsp oil. When the oil is hot add 3 eggs, 1/2 tsp salt, 1/4 tsp black pepper powder. scramble and keep it aside
Make Fried Rice
Heat 2 tbsp oil over high heat. When it begins to shimmer, add 1 tsp chopped garlic. Stir often and saute it lightly. No need to brown.
Add 1 small onion thinly sliced and saute for 2-3 minutes until translucent
Add 1/2 cup beans chopped small, 1 carrot chopped small, 1/2 capsicum, 1/2 cup of cabbage, and salt
Fry for 2-3 min over high flame
Add 2 cups of cooked basmati rice, 1 tablespoon soy sauce, 1 tsp black pepper powder, salt, green part of one spring onion, and cooked eggs.
Mix well for 2 min on high flame and turn off the heat.
Remove the pan from the stove and sprinkle 1/2 tsp sesame oil. Garnish with coriander leaves. This step is optional.
