Ingredients
  

Scramble Egg

  • 1 tbsp oil
  • add 3 eggs salt
  • 1/4 tsp pepper

For Egg Fried Rice

  • 2 tbsp oil
  • 1 small onion sliced thin lengthwise
  • 1 tsp chopped garlic
  • 1/2 cup beans chopped small 5-6 beans
  • 1 carrot chopped small
  • 1/2 capsicum sliced
  • 1/2 cup cabbage sliced thin
  • salt
  • 2 cup cooked basmati rice
  • 1 spring onion green part
  • 1 tablespoon soy sauce
  • 1 tsp black pepper powder
  • salt
  • 1/2 tsp toasted sesame oil optional

Instructions
 

  • Scrambled Eggs
  • In a pan, heat 1 tbsp oil. When the oil is hot add 3 eggs, 1/2 tsp salt, 1/4 tsp black pepper powder. scramble and keep it aside
  • Make Fried Rice
  • Heat 2 tbsp oil over high heat. When it begins to shimmer, add 1 tsp chopped garlic. Stir often and saute it lightly. No need to brown.
  • Add 1 small onion thinly sliced and saute for 2-3 minutes until translucent
  • Add 1/2 cup beans chopped small, 1 carrot chopped small, 1/2 capsicum, 1/2 cup of cabbage, and salt
  • Fry for 2-3 min over high flame
  • Add 2 cups of cooked basmati rice, 1 tablespoon soy sauce, 1 tsp black pepper powder, salt, green part of one spring onion, and cooked eggs.
  • Mix well for 2 min on high flame and turn off the heat.
  • Remove the pan from the stove and sprinkle 1/2 tsp sesame oil. Garnish with coriander leaves. This step is optional.

Notes

Peanut oil gives a nice flavour to fried rice.
For this recipe, you can use any vegetables you wish. This fried rice works well with green beans, corn, bell peppers, carrots, zucchini, and peas. It's entirely up to you how much vegetables you use. Remember that the more vegetables you use, the more moisture you'll likely bring to the wok as the fried rice cooks. This could result in mushy fried rice.
It makes no difference which colour onion you use. Onions can be red, white, yellow, or sweet. You can substitute shallots for onions if you don't have any.
