This egg-fried rice recipe is quick and easy to make, versatile with any of your favorite ingredients, and so delicious!!
Cooked Rice: It is one of the recipes that you can make use of leftover rice that has been fully chilled. If the rice is freshly made and warm it may result in soggy and sticky clumps when making fried rice. If you have to make a new batch of rice then spread it out on a big flat pan, cover with a plastic wrap, then chill it for 30 minutes in the fridge or until it is cooled down.
Oil: I’ve prepared fried rice using different oils, and I like peanut oil for fried rice. It tastes so much better compared to other vegetable oil. If you like the flavour of butter that is also a good option.
Adding Veggies: Veggies go a long way toward adding taste and freshness to fried rice, in addition to adding some wonderful splashes of colour. Add some more wonderful stir-fried vegetables to this dish to make it more for your taste.
Sauté pan: We recommend using a nonstick or cast-iron pan for this recipe if you have one.

Ingredients
Scramble Egg
- 1 tbsp oil
- add 3 eggs salt
- 1/4 tsp pepper
For Egg Fried Rice
- 2 tbsp oil
- 1 small onion sliced thin lengthwise
- 1 tsp chopped garlic
- 1/2 cup beans chopped small 5-6 beans
- 1 carrot chopped small
- 1/2 capsicum sliced
- 1/2 cup cabbage sliced thin
- salt
- 2 cup cooked basmati rice
- 1 spring onion green part
- 1 tablespoon soy sauce
- 1 tsp black pepper powder
- salt
- 1/2 tsp toasted sesame oil optional
Instructions
- Scrambled Eggs
- In a pan, heat 1 tbsp oil. When the oil is hot add 3 eggs, 1/2 tsp salt, 1/4 tsp black pepper powder. scramble and keep it aside
- Make Fried Rice
- Heat 2 tbsp oil over high heat. When it begins to shimmer, add 1 tsp chopped garlic. Stir often and saute it lightly. No need to brown.
- Add 1 small onion thinly sliced and saute for 2-3 minutes until translucent
- Add 1/2 cup beans chopped small, 1 carrot chopped small, 1/2 capsicum, 1/2 cup of cabbage, and salt
- Fry for 2-3 min over high flame
- Add 2 cups of cooked basmati rice, 1 tablespoon soy sauce, 1 tsp black pepper powder, salt, green part of one spring onion, and cooked eggs.
- Mix well for 2 min on high flame and turn off the heat.
- Remove the pan from the stove and sprinkle 1/2 tsp sesame oil. Garnish with coriander leaves. This step is optional.
