Ingredients
  

  • 50 gram coriander seeds 3/4 cup
  • 10 gram green cardamom
  • 10 gram black cardamom
  • 10 gram cloves 1 1/2 tbsp
  • 10 gram cinnamon
  • 1 nutmeg 5-6 gm
  • 10 grams peppercorns
  • 15 bay leaves
  • 5 gram mace javitri
  • 1 tbsp fennel seeds

  • Gather all ingredients
  • Break down the cinnamon stick into small pieces.
  • Crush nutmeg into pieces
  • Cut Bay leaves into large pieces
  • How to Make Garam Masala Powder
  • Heat a frying pan and add coriander seeds. Dry-roast for 3-4 minutes. Remove and allow to cool
  • Add all remaining spices (except coriander seeds, nutmeg, and bay leaves) into the same pan. Dry-roast on low heat for about 5 minutes stirring continuously to roast all spices evenly.
  • Add bay leaves and stir, continue to roast them for 1 more minute.
  • Switch off the heat and transfer the spices immediately to a plate. Spread it out and let it cool completely.
  • Grind all roasted spices into fine powder in a coffee grinder, spice grinder, or blender.
  • (Optional) Sieve the powder to remove any big pieces or fiber. Repeat the grinding as needed.
  • Store the powdered garam masala in an air-tight container and use it as needed.
