- 50 gram coriander seeds 3/4 cup
- 10 gram green cardamom
- 10 gram black cardamom
- 10 gram cloves 1 1/2 tbsp
- 10 gram cinnamon
- 1 nutmeg 5-6 gm
- 10 grams peppercorns
- 15 bay leaves
- 5 gram mace javitri
- 1 tbsp fennel seeds
Preparation
Gather all ingredients
Break down the cinnamon stick into small pieces.
Crush nutmeg into pieces
Cut Bay leaves into large pieces
How to Make Garam Masala Powder
Heat a frying pan and add coriander seeds. Dry-roast for 3-4 minutes. Remove and allow to cool
Add all remaining spices (except coriander seeds, nutmeg, and bay leaves) into the same pan. Dry-roast on low heat for about 5 minutes stirring continuously to roast all spices evenly.
Add bay leaves and stir, continue to roast them for 1 more minute.
Switch off the heat and transfer the spices immediately to a plate. Spread it out and let it cool completely.
Grind all roasted spices into fine powder in a coffee grinder, spice grinder, or blender.
(Optional) Sieve the powder to remove any big pieces or fiber. Repeat the grinding as needed.
Store the powdered garam masala in an air-tight container and use it as needed.
