Ingredients Needed For Apple Crisp

  • Apples: You need about 7-8 medium apples, peeled, cored, sliced. You can use any apples for this but the combination of granny smith and pink lady tastes really good.
  • Brown Sugar: We use brown sugar to bring moisture, flavour and sweetness to the entire dish. You need it for both filling and topping.
  • White Sugar: It helps to caramelize together.
  • All-purpose flour: Base for the topping
  • Vanilla & Salt: Vanilla adds a unique flavour to apple crisp and salt balances out the sweetness. Adding a pinch of salt makes a difference.
  • Cinnamon & Nutmeg: Goes well with apple
  • Lemon Juice: It helps the apple from browning and also give a nice flavour.
  • Butter: Use very cold butter to avoid it melting too quickly and losing its texture. Cut it into small cubes and combine it with flour, brown sugar, and cinnamon using a fork or pastry cutter. It is ok for the mixture to be coarse, crumbly with uneven butter pieces.
  • Oats: Topping is the best part of Apple Crisp. Some oats crisp up, while others remain soft and chewy. You can use either whole oats or instant oats.

What is Unique About this Recipe?

Most of the Apple crisp recipes use raw apples but in this recipe, the apple is caramelized before baking with topping. Sometimes the topping gets cooked faster than apple. It may not be as soft as you like so caramelizing ahead of time helps if you like softer consistency.

Ingredients
  

Caramelize Apples Filling

  • 6-7 Medium apples cut into 1-inch slices (about 9-10 cups)
  • 2 tbsp butter
  • 1/4 cup white sugar
  • 1/4 cup packed light or dark brown sugar
  • 1/4 teaspoon ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1 tbsp water
  • 1/4 tsp salt
  • 1 tablespoon lemon juice juice of 1/2 lemon
  • 1 tablespoon corn starch or all purpose flour

For the topping

  • 1/2 cup unsalted butter cold and cubed(1 stick; 115 gram)
  • 1/2 cup all-purpose flour
  • 1 cup 80gm old-fashioned whole oats or oatmeal (rolled oats)
  • 1/4 cup brown sugar if you like sweet, then add 1/4 cup more.
  • 1/4 cup white sugar
  • 1/2 tsp ground cinnamon

Instructions
 

  • Heat the oven to 375 degrees F. Butter a 13-by-9-inch baking dish. Any 4-quart baking dish works.
  • Core and cut the apple into 4 quarters, slice them into about 1/4 inch slices. Add 1 tablespoon lemon (juice of half lemon). It helps the apple from browning.
  • Heat a pan over medium heat, add 2 tbsp butter, when it melts add 1/4 cup brown sugar, 1/4 sugar white sugar, 1 tbsp water, 1/4 tsp salt, and sliced apples. When the apple softens, transfer this to the baking dish. Keep it aside.
  • In a medium bowl, whisk the 1/2 cup flour, 1/4 cup brown sugar, 1/4 cup white sugar, 1/2 tsp cinnamon, and 1/4 tsp salt. Add the cubed butter, and stir with a fork or pastry cutter until the crumbs are evenly moistened. Stir in the rolled oats.
  • Add 1 tablespoon corn starch or all-purpose flour to the filling and mix it very well.
  • Sprinkle the toppings over the apple and do not press it down
  • Bake at 350 degrees F for about 25 - 30 minutes or until the topping is golden brown and the juices are bubbling around the edges.
  • Remove the pan from the oven and place it on a wire rack to cool for at least 5 minutes before serving. Serve it plain or with vanilla ice cream, warm, room temperature.
  • You can store the leftover (covered) in the refrigerator for up to 5 days.

Notes

Instead of 1 cup rolled oats, you can use 1/2 cup rolled oats + 1/2 cup Grape-Nuts or 1/2 cup walnuts
You can replace the white sugar with brown sugar
Vanilla ice cream and salted caramel for serving.
